Authentic Food

The supermarket offers the false luxury of buying any food we choose, from all over the world, at any time. But true luxury is being able to choose what is close at hand, picked when it is ripe, perfect, seasonal, and safe. You don't want to have to ask, "Where has this lettuce been and what have they done to it?"

The best vegetables are fresh and full of the ability to impart health. Since that is the food we like to eat we were naturally inspired to figure out how to grow it in our own backyard every day of the year, even here in our cold Maine climate. After trial and error we have figured out how to put our food supply back into our own hands and experience the pleasure and plenty of having fresh vegetables right outside the door. We have kept a food journal during our years of experimenting with winter greenhouse production.
